Zucchini Casserole

2-3 cups zucchini, thinly sliced
1 medium onion, diced
2 large carrots, shredded (enough for 1 cup)
10 3/4 oz can cream of celery soup
10 3/4 oz can condensed cream of chicken soup
1/4 tsp salt
dash of pepper
dash of ground cumin, if you want

Spray crock pot with cooking spray. Mix vegetables, soups, and salt together in crock pot. Cover. Cook on high 4-6 hours, or until vegetable are crunchy or as soft as you like.
